The History of The Albion Hotel

A long history, a new chapter

The Albion Hotel has been part of Kyneton’s streetscape since 1861, standing proudly through the town’s early growth during Victoria’s gold rush era. Originally built as the Club Hotel, the building reflects a time when Kyneton was emerging as an important regional centre — a place for travellers, locals and workers to gather, rest, eat and share stories.

Like many great country pubs, the Albion has evolved over generations. Its name, drawn from an old poetic word for Britain, speaks to the traditions of the classic Australian hotel — a welcoming place built on good food, good company and a strong sense of community. While the building has been carefully updated over time, its character and purpose have remained the same: a local meeting place at the heart of town.

Today, the Albion enters its next chapter under the care of Tim and Lauren, who bring both deep hospitality experience and a genuine love for regional living.

 

 

 

 

Married for over 20 years, Tim and Lauren chose to settle in the Macedon Ranges in 2010, drawn by the beauty, quiet pace and strong sense of community — the perfect place to raise their four children and, eventually, put down roots in a pub of their own.

Tim has spent more than 20 years cooking professionally, building an impressive career across some of Melbourne’s most well-known venues.

After moving from Bendigo to Melbourne in 1998, he completed his apprenticeship in an Italian restaurant in Toorak, before working under celebrated chefs Greg Malouf and Harry Hajisava at O’Connell’s Hotel in South Melbourne. He went on to finish his apprenticeship at Sails on the Bay in Elwood, where he spent six years refining his craft.

Tim’s career continued as Head Chef and Executive Chef at venues including The Provincial Hotel (Fitzroy), The Exchange Hotel (Port Melbourne) and The Station Hotel (Footscray). During his time at the Exchange, the venue’s chicken parmigiana earned a reputation as one of Melbourne’s best.

 

More recently, Tim worked in food procurement for Australian Venue Co, before deciding the time was right to return to regional Victoria and pour his experience into a pub of his own.

Lauren’s background is in medical laboratory science, having completed a Bachelor of Applied Science in Bendigo. Today, she plays an integral role supporting Tim at the Albion, while also sharing her passion for landscape photography.

 

Lauren’s work features throughout the hotel, adding a personal and creative layer to the space, and her dedicated gallery — located at the rear of the hotel — is now open for viewing.
